THE ULTIMATE CHOCOLATE BROWNIE MUFFINS Submitted by Kittencalrecipezazz. food.com

 

INGREDIENTS (11 ingredients)

  • 34cup good quality baking cocoa
  • teaspoon  baking powder (heaping)
  • 34cup  butter or 3/4 cup  margarine, melted 
  • 12cup  boiling water
  • tablespoon  vanilla
  • 14cups  sugar (or to taste)
  • eggs
  • 13cups  all-purpose flour
  • 14teaspoon  salt
  • 12cup mini chocolate chip (optional)
  • 12cup  walnuts (optional)

    DIRECTIONS

    • Set oven to 350°F.
    • Line 12 muffin tins with paper liners.
    • In a medium bowl combine cocoa and baking powder; mix to combine.
    • Add in boiling water; mix well with a wooden spoon to combine.
    • Add in the melted butter and vanilla; mix well.
    • Add in the sugar, mix well with a wooden spoon.
    • Stir in eggs with a wooden spoon; mix until combined.
    • Mix the flour with salt; add in the chocolate mixture; mix well to combine (batter will be a bit on the thin side).
    • Add/mix in mini chocolate chips or walnuts (or 1 cup of both!).
    • Using an ice cream scoop fill each of the muffin tins almost to the top.
    • Bake for 25-30 minutes or until muffins are done, don't over bake! (might take a little longer, depending on how full the muffin tins are with the batter).
    • Cool, drizzle glaze over or frost with buttercream frosting.  (I made them as mini muffins and baked them at 350 for 13 minutes. I chopped up some (a scant 1/4 cup) semi-sweet chocolate chunks from Trader Joe's and mixed them in.--Nico)

  • Preheat oven to 425 degrees F. Mix togther seasonings well. Lay pork chop on cutting board and coat both sides well. Allow excess to fall off and lay on a baking sheet. 
  • When all are coated slice butter into 3 equal pieces and set 1 piece on each chop. Bake for 24 minutes (time will vary depending on exact thickness). Remove once internal temperature in middle thickest part registers 145 degrees F.
  • Remove baking sheet and leave on tray for 10 minutes before slicing and eating.

Chili Lime Chicken

 Andrew loves the Chili Lime Chicken at Costa Vida.  This recipe is pretty good.  I think I will increase the chili powder by at least 1/2 tsp. next time.  It is from the recipe site named rasamalaysia.com

Ingredients

  • 2 - 2 1/2 lbs. skin on chicken thighs

Marinade:

  • 1/2 cup fresh lime juice
  • 3 teaspoons fresh lime zest
  • 1/4 cup olive oil
  • 4 tablespoons fresh cilantro chopped finely
  • 2 jalapeƱo chopped finely
  • 4 cloves garlic chopped finely
  • 1 tablespoon honey
  • 2 teaspoons salt
  • 1 teaspoon chili powder or to taste

Instructions

  • Rinse the chicken thighs, remove the bones, leave the skin on, and pat dry with paper towels. Set aside.
  • Get a big bowl, mixing all the ingredients of the Marinade together using a whisk. Make sure the Marinade is well combined together.
  • Add chicken to the Marinade, make sure to stir and coat the chicken evenly. Marinate for 2 hours.
  • Fire up the grill, brush a little bit of oil on the surface. Add a little bit of the garlic, cilantro, and jalapeno from the Marinade on top of the chicken and grill them until they turn golden brown and charred on both sides. Serve immediately.
